A Vegan Recipe

Ok so I rarely post these types of pictures but.....

I am only 6lbs away from my goal!! 22lbs ( and 3 dress sizes) lost so far over the last year. Yeah, it took me a year...but losing the weight in a healthy and committed way has proved much more beneficial than crash dieting. And it's staying off.

Much of it was lost in the last few months. A few of you know that I challenged myself spiritually, mentally and physically this Lenten season to eat "nearly vegan" (I've allowed some fish). I didn't do it for the weight loss...but it's been a pleasant side effect. I'll write another post in the near future about why I did it and what I gained from it.

But first, I wanted to share a delicious vegan recipe that I psuedo invented...I combined a few recipes from others to make my own lentil soup. I guess its not the most springtimey recipe but it might be a delicious option for a rainy day. Sometimes I like to pretend I have my own cooking show (don't judge, you know you've done it too)...so bear with my photos and captions below. Let me know if you try the recipe or adapt it to something that suits your taste!

 

First, I sauteed onions, celery, carrots and crushed garlic in olive oil...yum! I seasoned with a little salt and pepper

Then I added a can of tomatoes and simmered until some of the tomato juice evaporated

Then I stirred in the lentils until they were covered with deliciousness.



Then I added 2 containers (64oz.) of organic vegetable broth and a few bay leaves for flavor (make sure you remember to take the bay leaves out before serving the soup - they can be harmful to your tummy).


Lastly, I added a cup of brown rice and let simmer for almost an hour (the brown rice takes foreeeeeever to cook). Add less brown rice for a more soupy texture because it really thickened up for me. Add extra seasoning to suit your taste.

This huge pot of soup lasted me a whole week and was thick and hearty enough to be a whole meal.
